Comparison of Lipid-Related Compounds in Wheat Cultivars and Their Physiological Activities

Abstract

|
We investigated the lipid components in ten wheat cultivars and their physiological activities. The crude lipid contents of wheat cultivars varied from 1.42 to 2.35%. The ¥á-tocopherol content of ¡®Ofri¡¯ (9.15 ¥ìg/g) and the ¥â-tocopherol content of ¡®Baekchal¡¯ (4.19 ¥ìg/g) were higher than that in other cultivars. ¥ã-Tocopherol contents of ¡®Baekchal¡¯, ¡®Saegeumgang¡¯, and ¡®Hwanggeumal¡¯ were 0.23, 0.19, and 0.23 ¥ìg/g, respectively, but it was not detected in any other cultivar. ¥á-Tocotrienol content was highest in ¡®Baekkang¡¯ (3.83 ¥ìg/g), and ¥â-tocotrienol contents ranged from 12.42 to 17.24 ¥ìg/g and were also highest in ¡®Baekkang¡¯. ¥â-Sitosterol and campesterol contents were higher in ¡®Goso¡¯ (2,527.18 and 284.72 ppm, respectively) than in other cultivars. DPPH radical scavenging activities ranged from 2.41 to 4.26 mg TE/g, and ¡®Jokyoung¡¯ had the highest level. ¡®Baekchal¡¯ had greatest tyrosinase inhibitory activity (50.62¡69.60%). The study provides basic information on the functional properties of wheat cultivar lipids and will aid the utilization of wheat as a raw material for cosmetic industries.
